A Spring Favorite: Asparagus

One of the culinary highlights of spring is the arrival of asparagus.  While you can find it year-round, asparagus is most tender and flavorful in April. 

This recipe showcases asparagus by roasting it with olive oil to intensify its flavor.  Breadcrumbs toasted with olive oil, herbs and Parmesan add salty texture.  And a drizzle of balsamic ties the dish together.  It’s a perfect dish to accompany roasted meats, and it would make a fantastic Easter side.

Roasted Asparagus with Parmesan Breadcrumbs

Serves 4 as a side dish

Ingredients

1 bunch asparagus, washed and ends trimmed

2 tablespoons extra virgin olive oil (fans of The Olive Scene should try Tuscan Herb or Gremolata olive oil)

1/2 c panko breadcrumbs

4 tablespoons freshly grated Parmesan cheese

1 teaspoon dried Italian seasoning (omit if using a flavored olive oil)

2 teaspoons high-quality balsamic vinegar

Salt and pepper to taste

Preparation

Preheat the oven to 400 degrees Fahrenheit. 

Toss the asparagus in 1 tablespoon of the olive oil and season with salt and pepper.  Roast for 8-10 minutes, tossing the asparagus in the pan halfway through cooking.  It’s done when a fork can pierce the asparagus with slight resistance, but be sure to pull the pan from the oven before it gets overcooked.

Meanwhile, heat the remaining oil in a medium-sized frying pan on the stove over medium heat.  When the oil is hot, add the breadcrumbs and toss to evenly distribute the oil through the breadcrumbs.  Toast in the pan, stirring often, until the breadcrumbs are golden brown, about 4 minutes.  Remove the pan from the heat.  Stir in the Parmesan, Italian seasoning, a few cracks of freshly ground pepper and a pinch of salt.  Taste and adjust seasoning as needed.

When the asparagus is done, transfer the stalks to a plate.  Drizzle the balsamic over the asparagus.  Top with breadcrumbs.
